Advice? Anyone?

Hey, i just got back from my 8am saturday math class and feel like i am going to melt into my bed/sofa/or any surface. we finished our fondant celebration cakes (i will post the pic in the next post) but most importantly, we have a mystery box plated dessert quiz on monday and we each got to pick out of a hat three flavors and make a fine dining, balanced dessert using the ingredients. Mine are apple, cinnamon, and walnut. honestly, i was a bit disappointed because this pairing is very cliche. but i need to get creative so if you have ANY ideas, throw em at me! there are rules though: i cant do frozen desserts (no ice cream, sorbet, etc), no flambeed desserts, no custards like flan, creme brulee, etc, and no souffles. sure i could do a cobbler-esque type thing, but again, thats pretty cliche so if theres anything you guys can think of, let me know! i'll post the final end result on monday!

This may be too simple for your purposes, but I like to core whole apples, and then cut down into them in a cone shape. Stuff the apple with a cinnamon/sugar/butter/walnut mixture and bake until the apple is tender. If you use enough of the sugar and butter it kinda melts all down the sides of the apple, too.

I dunno, maybe you can take that and make it fancier or something. You're right, though, its a very predictable, all American kind of dessert.

I know i was thinking maybe making individual funnel cakes with a apple/walnut mix on top with a caramel cage but i have a feeling she won't go for my "carnival" fare as far as it being "fine dining"...i'll look online for some fine dining dessert menus...hopefully something will pop up

I saw once on a show this dish that looked fancy. The guy an apple tarte or something in some ramekins. Served it with ice cream. Looked good.

Hmm...here are a few ideas (I don't cook much, really, so I'm not sure how difficult/feasible these are):
-apple pie wontons
-apple trifle with walnut wafers
-apple mousse cake with walnut-crumb crust
-apple/cinnamon/walnut cannoli
-maybe this might lend some ideas (?): http://candiedquince.ca/archives/70

hope that helps a little. :-)
